Italian Risotto Cooked With Mushroom And Parmesan

Preparation time – 10 minutes

Cooking time – 35 minutes

Ingredients

  • Mushroom – 200 gm, sliced
  • Onion – 1, chopped
  • Butter – 50 gm
  • Chicken stock – 4 cups (you can use veg stock also)
  • Olive oil – 2 tbsp
  • Arborio rice – ½ cup
  • White wine – ¼ cup
  • Parsley – 1 tbsp
  • Parmesan – 1/3 cup, grated
  • Salt and pepper – to taste
  • White wine – ¼ cup

Directions

  • Take a saucepan and put it on medium flame. Add some olive oil and butter and once it is hot, add the chopped onion and mushroom slices. Sate them for a few minutes and add the rice. Let them cook for a few minutes so that the rice becomes transparent. If it is too dry, you can add white wine.
  • Now pour a ladleful of stock in the saucepan and let the rice cook till dry. Pour remaining stock and cook the rice with the lid on till the rice becomes soft.
  • Sprinkle salt and pepper as per taste. Stir well.
  • Remove the saucepan from heat and add the grated cheese, parsley and remaining butter and give them a stir. You tasty mushroom risotto is ready.

Panzanella-Yummy Bread Salad From Tuscany

The uniqueness of this recipe is that you can combine different types of ingredients to make it; only the tomatoes and bread remain unchanged. A perfect dish for a summer night, you can accompany it with a glass of iced Prosecco.

Preparation time – 10 minutes

Cooking time – 35 minutes

Ingredients

  • Juicy tomatoes – 1 kg
  • Cucumber – 1
  • Small olives – 100 gm
  • Onion – 1, cut into slices
  • Sun-dried tomatoes with oil – 100 gm
  • Oregano – handful
  • Parsley – handful
  • Garlic – 2 cloves, minced
  • Balsamic vinegar – 2 tbsp
  • Ciabatta bread – 1 loaf
  • Salt and pepper – to taste

Directions

  • Start by cutting the cucumber and tomatoes in cubes and keep them in a large bowl. Now add the sundried tomatoes along with their oil, balsamic vinegar, minced garlic, olives, onion slices. Mix all the items very well.
  • Now sprinkle some salt and pepper and taste the seasoning. If you need, you can add little more vinegar and salt and pepper.
  • Sprinkle the oregano as well as parsley and mix again.
  • Cover the bowl with a lid and keep it for the whole night within the fridge. At the time of serving, take the bowl out of the refrigerator and cut the Ciabatta in small pieces and add into the salad. And give them a final mix just before serving into bowls.
  • You can toast the Ciabatta a little before adding into the salad. You can also make it more colorful by adding yellow and red peppers.
