Mixed Vegetable And Pasta Soup From Italy

Preparation time – 15 minutes

Cooking time – 50 minutes

Serves – 8 people

Ingredients

  • Pasta – 140 gm
  • Chopped carrots – 2
  • Chopped onions – 2
  • Tomato puree – 2 tbsp
  • Celery – 4 sticks, chopped
  • Sugar – 2 tbsp
  • Olive oil – 1 tbsp
  • Crushed garlic – 4 cloves
  • Vegetable stock – 1.2 liter
  • Bay leaves – 2
  • Thyme – a handful
  • Courgettes – 3, chopped
  • Parmesan – 100 gm, grated
  • Chopped basil – a handful
  • Tomatoes – 400 gm, chopped
  • Butter beans – 400 gm, drained

Directions

  • Take a big saucepan and put it on medium flame. Add the olive oil and as it becomes hot, add the onions, carrots, and celery. Cook them till they become tender.
  • Now add the sugar, crushed garlic, tomato puree, and courgettes along with thyme and bay leaves. Let them cook for around 5 minutes so that they get a nice brown color.
  • Pour the vegetable stock and mix the chopped tomatoes and beans. Let it cook on low heat for about 20 minutes.
  • After that, mix the cheese and cooked pasta with the concoction. Give them a stir and add the basil and put the heat off.
  • You can have a bowl of this soup and feel all the goodness of veggies, cheese, and spices. Or have it with garlic bread. Garlic bread with cheese and a bowl of hot soup is the perfect combination to warm you up.

Tortellini Soup With Tomatoes

Preparation time – 10 minutes

Cooking time – 30 minutes

Ingredients

  • Sun-dried tomatoes in oil – ½ cup, chopped
  • Crushed garlic – 1 clove
  • Tomato paste – 1 tbsp
  • Onion — ½ cup, chopped
  • Carrot – 1, chopped
  • Sugar – 1 tbsp
  • Vegetable stock – 32 ounces
  • Tomatoes – 1 cup, crushed
  • Salt and pepper – to taste
  • Tortellini – 8 ounces
  • Spinach – 5 ounces
  • Butter – 2 tbsp
  • Heavy cream – ½ cup
  • Chopped parsley and grated Parmesan – for garnishing

Directions

  • Take a deep bottomed pot and add the tomatoes in oil, onions, chopped carrots, crushed garlic and tomato paste. Stir for about 3 minutes.
  • Now mix the sugar, crushed tomatoes, vegetable stock and season them with pepper and salt. Let it boil for a few minutes and after that cook on low flame for about 15 minutes.
  • Pour this mixture into a blender and blend till you get a smooth concoction. Tip the smooth mixture into the bowl and add the butter, spinach along with the cream. Mix them thoroughly.
  • Now cook the tortellini following the instructions written on the packet and when done, add the cooked tortellini in the hot soup and mix again so that the pasta gets mixed in the soup properly.
  • Sprinkle the grated parmesan and parsley on the top of the soup and serve.
