The Mediterranean and Italian cultures are on your mind as you read this. It might be that you have been thinking about cooking Italian recipes at home, maybe for an upcoming party or gathering. If so, you’ll definitely want to read this article. Because we’re going to talk about a favorite of mine-the the Shredded Chicken Italian Salad.
We are blessed with all kinds of recipes in this country. But for me, the thing that really sets Mexican food apart is the ability to throw together a salad and some tasty ingredients and call it an Italian Salad. Sure, many people will think I’m crazy about combining chicken and pasta in an Italian salad but I believe it’s always a fun challenge to try. Some things just come naturally to me. The best part about these chicken and pasta salads is that they are very simple to make.
Chicken Italian Salad Is Delicious
For the base of the salad, you will need a good quality shredded chicken, some thinly sliced green onions, shredded mozzarella cheese, Parmesan cheese, dried oregano, basil leaves, black pepper, olive oil, and salt and pepper to taste. Remember to keep the dressing simple and sweet so you can cut back on the extra ingredients.
For the dressing, you will need some minced shallots, lemon juice, garlic, olive oil, red wine vinegar, Dijon mustard, salt, and pepper to taste. Combine all the ingredients except the dressing in a medium-sized bowl and stir them well until they are combined. The dressing will need to be a little bit tangy because it will be quite sweet.
Now it’s time to begin assembling the salad. Start by placing a small amount of each salad ingredient on one piece of an aluminum foil topper. This helps ensure that the salad will be able to sit out at room temperature and still stay fresh and not become soggy.
Next, you will need to add some sprigs of parsley, dill, and mustard seeds to the top of each tortellini. Next, layer one piece of each tortellini with a few grated mozzarella kinds of cheese, a few slices of your chosen chicken, two to three-inches thick slices of your favorite Italian sausage, four slices of your desired Italian ham, three-inches thick slices of your choice of Italian eggplant, one to two teaspoons of your Italian seasoning, one or two tablespoons of your Italian olives, black pepper, black olives, and two or three basil leaves. Finally, place another piece of aluminum foil topper on top of the entire salad and wrap it up tightly.
Chicken Italian Salad Needs Perfect Ingredients
- One or two cups of mixed fresh baby spinach. Another great combination is baby iceberg or romaine lettuce. Lay the spinach out in a single layer over the cooked tortellini and drizzle over a couple of tablespoons of olive oil.
- One or two cups of black olives, chopped. They add a great deal of sweetness and crunch to any salad, but I prefer them much more when they are topped with some additional marinara sauce.
- A few pinches of pepper, green onions, and garlic. Another addition is four to five eggs. This can be done in the morning before you go to work, and it’s wonderful for breakfast.
- Finally, of course, add some cheese to the salad. As far as types of cheese go, I’ve found that Daiya is my favorite. Not only does it add flavor and texture to the salad, but it comes in a great variety of cheeses, too.
By now you should have a wonderful salad, but you might want to throw in some juicy shiitake mushrooms too. If you don’t, feel free to add some of your own favorite ingredients and enjoy the salad even more. !
